Youvarlakia (egg-lemon with meatballs)
- Ingredients
- 1/2 lb. ground lamb (or veal or beef)
- 1/2 cup of rice
- 1 onion
- 2 Tbsp. minced parsely, 1 Tbsp. crushed mint
- 1 egg
- butter
- 1 can of beef consume or bullion
- salt to taste, pinch of pepper
- Egg-Lemon Sauce
- Directions
- Beat egg.
- Chop onion.
- Combine ground meat, egg, onion, mint and a pinch of salt and knead well.
- Roll mixture into round balls the size of walnuts.
- Roll balls in the minced parsley.
- In a deep pot, melt 4 Tbsp. of butter and arrange meatballs in rows at bottom of pot.
- Brown on all sides.
- Add bullion, 2 cups of water and another 2 Tbsp. of butter.
- Season with salt and pepper and simmer for 35-40 minutes.
- Remove from heat and add Egg-Lemon Sauce.
- Return to stove on low heat until served.
