Bourikakia (beef with filo)
- Ingredients
- 1 lb. ground beef
- 2 onions
- 3 eggs
- 2 sticks of butter
- 3 Tbsp. tomato paste
- 1/2 cup grated cheese
- Salt and pepper
- 1 pkg. of filo dough
- Directions
- Chop onions.
- Melt 1/4 stick of butter in sauce pan then add onions with ground beef, some salt and a pinch of pepper. Saute.
- Mix the tomato paste with a glass of water and add into the meat.
- Beat eggs.
- When the excess water evaporates from the sauce pan, you add the eggs and the cheese.
- Mix well, remove from burner and set aside to let cool.
- Melt remaining butter in separate sauce pan.
- Line cookie sheet with aluminum foil.
- Open the filo dough and cut in half, then cover with wax paper, aluminum foil or towel to prevent drying.
- Take one of the 1/2 sheets of filo, fold it once lengthwise,
then brush it with butter.
- On the narrow edge of the filo dough nearest you, spoon a half inch strip of the meat mixture (do not cover the entire width of the dough - leave a half inch border on each end). Then roll it like making a burrito or rolling a scatter rug. Once rolled, fold the ends in to encase it.
- Brush with butter, and place on cookie sheet.
- Once cookie sheet is filled, bake at 350 degrees for 15-20 minutes.
