Galopoula Gemisti #2 (stuffed turkey)


  • Ingredients
  • 1 turkey
  • Lemon juice, olive oil
  • 3-1/2 lb. hamburg
  • 1 lb. chestnuts (cooked, peeled, chopped)
  • Salt and pepper
  • 3/4 cup rice (uncooked)
  • Bunch of celery, 1/2 stick butter
  • 1 large onion, 1 cup raisins
  • 1 8 oz. can tomato sauce



  • Directions
  • Wash turkey inside and out after removing giblets from cavity.
  • Rub entire surface inside and out with salt and lemon juice.
  • Rub top of turkey with olive oil.
  • Roast at 325 degrees for about 5 hours. Halfway through roasting, cover with foil and begin making stuffing.
  • To make stuffing, chop celery (including leaves) into slices and cook in sauce pan with 2 cups of water until celery is soft (about 5 minutes). Remove and set aside.
  • Chop onions.
  • Place rice in Dutch oven with 1-1/2 cups of water and par boil for 10 minutes, then set aside.
  • Saute chopped onions in butter, add hamburger and brown the meat.
  • Add cooked celery, par boiled rice and tomato sauce. Simmer
    until done.
  • Add chestnuts and raisins. Mix well.
  • Pour 1/2 cup of turkey stock (from turkey roasting in oven) over mixture.
  • Bake covered for 45 minutes.
  • Serve with Turkey.
