Lamb with Potatoes
- Ingredients
- 4-5 lb. leg of lamb
- 3 cloves of garlic
- Salt and pepper to taste
- Juice of 1 lemon
- 1/4 cup of red wine
- 6-8 potatoes
- Directions
- Crush garlic, then mix with lemon and rub on lamb.
- Salt and pepper lamb.
- Place in roasting pan with 1 cup of water and bake at 350 degrees for 3/4 hour.
- Quarter potatoes and place aound lamb. Make sure there is enough water in pan to cook potatoes.
- Pour wine over lamb and cook for one more hour.
- Remove lamb.
- Add 1/4 cup of water to pan and raise oven temperature to 400 degrees and cook potatoes for 15 more minutes (until crisp and tender).
