Avgolemno (egg-lemon)


  • Ingredients
  • 8 cups of chicken broth
  • 1 cup of rice
  • 4 eggs
  • juice of 2 lemons
  • salt to taste
  • lemon slices (for garnish)



  • Directions
  • Bring chicken broth to boil.
  • Salt to taste.
  • Add rice and simmer covered for 20 minutes.
  • Remove from stove.
  • Drain excess chicken broth from rice and set aside.
  • Separate eggs.
  • In a bowl, beat egg whites until stiff.
  • Add yolks and beat well.
  • Slowly add lemon juice to eggs, beating continuously.
  • Then add 2 cups of the hot chicken broth and do not stop beating. The constant beating is important to prevent curdling.
  • When the eggs and broth are well mixed, add to remaining broth and then add the rice.
  • Stir well over heat, but do not bring to boil.
  • Serve at once in bowls with lemon slices for garnish.
