Avgolemno (egg-lemon)
- Ingredients
- 8 cups of chicken broth
- 1 cup of rice
- 4 eggs
- juice of 2 lemons
- salt to taste
- lemon slices (for garnish)
- Directions
- Bring chicken broth to boil.
- Salt to taste.
- Add rice and simmer covered for 20 minutes.
- Remove from stove.
- Drain excess chicken broth from rice and set aside.
- Separate eggs.
- In a bowl, beat egg whites until stiff.
- Add yolks and beat well.
- Slowly add lemon juice to eggs, beating continuously.
- Then add 2 cups of the hot chicken broth and do not stop beating. The constant beating is important to prevent curdling.
- When the eggs and broth are well mixed, add to remaining broth and then add the rice.
- Stir well over heat, but do not bring to boil.
- Serve at once in bowls with lemon slices for garnish.
