Soutzoukakin (smyrna meatballs)
- Ingredients
- 1 lb. ground round, cup of flour
- 3 slices bread, 2 Tbsp. grated cheese
- 1 egg, 28 oz. can tomato sauce
- 1/2 - 3/4 cup dry red wine
- 3/4 tsp. salt, pepper to taste
- 1/2 tsp. garlic salt, 2 tsp. vinegar
- Olive oil, 1 tsp. sugar
- Directions
- Soak bread in wine, then squeeze bread and wring out wine.
- Mix ground beef, egg, bread , salt, pepper and garlic salt.
- Blend well, shape into small rolls.
- Roll meatballs in flour, then fry in olive oil in heavy skillet
until nicely browned.
- Remove meatballs, then strain and reserve oil from skillet.
- Return about 1/4 cup of oil to skillet and add remaining ingredients.
- Cook sauce for about 5 minutes.
- Add meatballs to sauce and cook for 15-30 more minutes.
- Turn meatballs once during cooking time.
