Soutzoukakin (smyrna meatballs)


  • Ingredients
  • 1 lb. ground round, cup of flour
  • 3 slices bread, 2 Tbsp. grated cheese
  • 1 egg, 28 oz. can tomato sauce
  • 1/2 - 3/4 cup dry red wine
  • 3/4 tsp. salt, pepper to taste
  • 1/2 tsp. garlic salt, 2 tsp. vinegar
  • Olive oil, 1 tsp. sugar



  • Directions
  • Soak bread in wine, then squeeze bread and wring out wine.
  • Mix ground beef, egg, bread , salt, pepper and garlic salt.
  • Blend well, shape into small rolls.
  • Roll meatballs in flour, then fry in olive oil in heavy skillet
    until nicely browned.
  • Remove meatballs, then strain and reserve oil from skillet.
  • Return about 1/4 cup of oil to skillet and add remaining ingredients.
  • Cook sauce for about 5 minutes.
  • Add meatballs to sauce and cook for 15-30 more minutes.
  • Turn meatballs once during cooking time.
