Spanakopitakia (spinach triangles)
- Ingredients
- 1 lb. fresh spinach
- 1 large tomato
- 1/2 lb. feta cheese, crumbled
- 1/2 cup olive oil
- 2 scallions, 2 Tbsp. parsley
- 1 clove of garlic
- Pinch of pepper, salt to taste
- 1 lb. filo
- 1 lb. butter
- Directions
- Chop spinach, tomato, scallions and parsley (if fresh), then saute in olive oil until tender.
- Place in bowl and add salt, pepper and feta crumbs. Mix thoroughly and let cool.
- Melt butter.
- Line cookie sheet with aluminum foil.
- Cut filo into strips about 3"x9" and cover with wax paper, aluminum foil or towel to prevent drying.
- Brush one strip of filo with butter and place a teaspoon of the feta mix at the bottom of the strip.
- Fold one corner of the strip over the mixture to make a triangle. Fold the triangle again and again until you are at the end of the strip.
- Brush finished triangle with butter, and place on cookie sheet.
- Once cookie sheet is filled, bake at 350 degrees for 15-20 minutes.
