Spanakopitakia (spinach triangles)


  • Ingredients
  • 1 lb. fresh spinach
  • 1 large tomato
  • 1/2 lb. feta cheese, crumbled
  • 1/2 cup olive oil
  • 2 scallions, 2 Tbsp. parsley
  • 1 clove of garlic
  • Pinch of pepper, salt to taste
  • 1 lb. filo
  • 1 lb. butter



  • Directions
  • Chop spinach, tomato, scallions and parsley (if fresh), then saute in olive oil until tender.
  • Place in bowl and add salt, pepper and feta crumbs. Mix thoroughly and let cool.
  • Melt butter.
  • Line cookie sheet with aluminum foil.
  • Cut filo into strips about 3"x9" and cover with wax paper, aluminum foil or towel to prevent drying.
  • Brush one strip of filo with butter and place a teaspoon of the feta mix at the bottom of the strip.
  • Fold one corner of the strip over the mixture to make a triangle. Fold the triangle again and again until you are at the end of the strip.
  • Brush finished triangle with butter, and place on cookie sheet.
  • Once cookie sheet is filled, bake at 350 degrees for 15-20 minutes.
