Fasolatha (bean)


  • Ingredients
  • 1 lb. bag of navy beans
  • 1/2 cup of Olive Oil
  • 2 large onions
  • 2 large carrots
  • salt to taste
  • pinch of pepper
  • 8 oz. can of tomato sauce
  • 1 cup of chopped celery
  • 3 Tbsp. oregano



  • Directions
  • Soak beans overnight.
  • Rinse beans in colander.
  • Bring 3 quarts of water to a boil in a kettle and add beans.
  • Chops celery, carrots and onions and add to kettle.
  • Add the olive oil, oregano, salt, pepper and tomato sauce to the boiling water. An option to the tomato sauce is a Tablespoon of tomato paste.
  • Bring water to boil again.
  • Simmer for three hours.
