Fasolatha (bean)
- Ingredients
- 1 lb. bag of navy beans
- 1/2 cup of Olive Oil
- 2 large onions
- 2 large carrots
- salt to taste
- pinch of pepper
- 8 oz. can of tomato sauce
- 1 cup of chopped celery
- 3 Tbsp. oregano
- Directions
- Soak beans overnight.
- Rinse beans in colander.
- Bring 3 quarts of water to a boil in a kettle and add beans.
- Chops celery, carrots and onions and add to kettle.
- Add the olive oil, oregano, salt, pepper and tomato sauce to the boiling water. An option to the tomato sauce is a Tablespoon of tomato paste.
- Bring water to boil again.
- Simmer for three hours.
