Saltsa Me Domata (tomato)
- Ingredients
- 2 lbs. of fresh tomatos or large can (28 oz.) of peeled tomatos
- 3 Tbsp. olive oil
- 1/2 cup of onions
- 1 clove of garlic
- 1/2 tsp. sweet basil, 1/8 tsp. of oregano
- 1 bay leaf
- 3 Tbsp. chopped parsley
- Pinch of pepper, salt to taste
- Directions
- Scald tomatoes, peel and chop. If using canned tomatoes, chop.
- Chop onions and mince garlic.
- In a Dutch oven, saute onions and garlic in olive oil until golden.
- Add tomatoes and remaining ingredients.
- Simmer for 40 minutes.
