Macarima Kima
- Ingredients
- 2 lb. macaroni or noodles
- 1/2 lb. of butter, 6 oz. can tomato paste
- Grated mizitra, parmasean or Romano cheese (mizitra preferred)
- 2 onions, 3 cloves of garlic
- 1/4 tsp. ground cloves, 1/2 tsp. cinnamon
- 1 bay leaf, 1 cup of white wine
- Directions
- Chop onion and mince garlic.
- Saute onion and garlic in 4 Tbsp. of butter until soft.
- Add meat and brown well.
- Add cloves, cinnamon, bay leaf and tomato paste and mix well.
- Add wine and 2 cups of water.
- Lower fire and simmer for 1 hour.
- Meanwhile, cook macaroni in large pot of salted water (15-20 minutes).
- Drain well.
- Sprinkle a layer of grated cheese on a large platter.
- Cover with 1/2 the macaroni.
- Sprinkle generously with grated cheese.
- Cover with another layer of the macaroni.
- Sprinkle again with grated cheese.
- Melt butter in large skillet until it turns golden brown stirring continuously.
- Pour butter over macaroni.
- When meat sauce is finished cooking, pour into bowl and serve with the macaroni.
