Macarima Kima


  • Ingredients
  • 2 lb. macaroni or noodles
  • 1/2 lb. of butter, 6 oz. can tomato paste
  • Grated mizitra, parmasean or Romano cheese (mizitra preferred)
  • 2 onions, 3 cloves of garlic
  • 1/4 tsp. ground cloves, 1/2 tsp. cinnamon
  • 1 bay leaf, 1 cup of white wine



  • Directions
  • Chop onion and mince garlic.
  • Saute onion and garlic in 4 Tbsp. of butter until soft.
  • Add meat and brown well.
  • Add cloves, cinnamon, bay leaf and tomato paste and mix well.
  • Add wine and 2 cups of water.
  • Lower fire and simmer for 1 hour.
  • Meanwhile, cook macaroni in large pot of salted water (15-20 minutes).
  • Drain well.
  • Sprinkle a layer of grated cheese on a large platter.
  • Cover with 1/2 the macaroni.
  • Sprinkle generously with grated cheese.
  • Cover with another layer of the macaroni.
  • Sprinkle again with grated cheese.
  • Melt butter in large skillet until it turns golden brown stirring continuously.
  • Pour butter over macaroni.
  • When meat sauce is finished cooking, pour into bowl and serve with the macaroni.
