Kota Kapama (spiced ckicken)


  • Ingredients
  • 1 chicken, 1 lb. macaroni or ziti
  • 3 onions, 3 cloves of garlic
  • 2 cups crushed tomatoes, grated cheese
  • 6 Tbsp. butter, 1 tsp. sugar
  • 6 oz. can tomato paste
  • Salt and pepper to taste
  • 3 cinnamon sticks, dash cinnamon



  • Directions
  • Cut chicken into pieces and wipe dry.
  • Chop onions, mince garlic.
  • Sprinkle chicken with salt, pepper and cinnamon.
  • Melt 2 Tbsp. butter in Dutch oven and brown chicken on all sides.
  • Combine tomatoes, tomato paste, sugar and 3/4 cup of water and pour over chicken.
  • Add cinnamon sticks and simmer.
  • In another pan saute onions and garlic in 2 Tbsp. of butter and add to chicken.
  • Bring sauce to boil, cover and simmer until chicken is tender (1 hour plus).
  • When chicken is done, cook macaroni, drain and place in serving dish.
  • Brown remaining butter and pour over macaroni.
  • Remove chicken from pot and place in a bowl.
  • Pour sauce from chicken pot on macaroni and sprinkle with grated cheese.
  • Serve chicken and macaroni separately.
