Kota Kapama (spiced ckicken)
- Ingredients
- 1 chicken, 1 lb. macaroni or ziti
- 3 onions, 3 cloves of garlic
- 2 cups crushed tomatoes, grated cheese
- 6 Tbsp. butter, 1 tsp. sugar
- 6 oz. can tomato paste
- Salt and pepper to taste
- 3 cinnamon sticks, dash cinnamon
- Directions
- Cut chicken into pieces and wipe dry.
- Chop onions, mince garlic.
- Sprinkle chicken with salt, pepper and cinnamon.
- Melt 2 Tbsp. butter in Dutch oven and brown chicken on all sides.
- Combine tomatoes, tomato paste, sugar and 3/4 cup of water and pour over chicken.
- Add cinnamon sticks and simmer.
- In another pan saute onions and garlic in 2 Tbsp. of butter and add to chicken.
- Bring sauce to boil, cover and simmer until chicken is tender (1 hour plus).
- When chicken is done, cook macaroni, drain and place in serving dish.
- Brown remaining butter and pour over macaroni.
- Remove chicken from pot and place in a bowl.
- Pour sauce from chicken pot on macaroni and sprinkle with grated cheese.
- Serve chicken and macaroni separately.
