Lamb and Stringbeans
- Ingredients
- 2 lb. of lamb
- 2 medium onions
- 1 lb. fresh string beans
- 2 Tbsp. olive oil, 2 Tbsp. parsley
- 1/2 cup tomato paste, 8 oz. can tomato sauce
- 2-3 whole tomatoes
- 1 cup beef broth, 4 potatoes
- Salt and pepper, 1 cup water
- Directions
- Clean beans.
- Chop onions.
- Cut lamb into desirable pieces, then brown in olive oil.
- Add onions, brown well.
- Dilute tomato paste in water then add it to the meat with the parsley and broth.
- Quarter potatoes and chop tomatoes.
- Add potatoes, tomatoes and beans to lamb. Salt and pepper to taste.
- Simmer until meat and beans are tender (about 1 1/2 hours).
